Wisconsin Cauliflower Soup

This is my favorite soup from Zupas, so I decided to re-create it.

Ingredients:

  • 473 ml chicken broth
  • 30 ml unsalted butter
  • 340 g cauliflower
  • 5 ml onion powder
  • 2.5 ml garlic powder
  • 115 g shredded sharp cheddar cheese
  • 30 ml heavy cream
  • 1 pinch salt

Directions:

  1. In a saucepan combine the chicken broth, butter, cauliflower, onion powder, and garlic powder.
  2. Simmer on the stove for 5-10 minutes until the cauliflower is soft.
  3. While the cauliflower is simmering grate the cheese.
  4. Put everything from the pot into a blender and blend until smooth. Go slow, because the hot liquid will make the lid fly off and create a huge mess.
  5. Return to the pan and add the cheese. Stir until all the cheeses is melted.
  6. Add the cream and add salt to taste.

Note:

Do not use grated cheese from the store. It has an anti-caking agent on it.
